Demystifying Delicata (squash)

Delicata squash is a variety of winter squash with cream-colored cylindrical fruits striped in green or orange that are cooked. As its name suggests, it has characteristically a delicate rind. It is also known as peanut squash, Bohemian squash, or sweet potato squash Preheat oven to 425°

Cut off the ends, slice into even rounds approximately ½” wide. Use a teaspoon to scoop out the seeds and discard. Place round on parchment covered baking sheet and drizzle with olive oil. Mix around to coat the squash surfaces with oil. Season with herbed salt and place in oven for 10 minutes. Open the oven door and sprinkle about 1 Tablespoon of shrub (fruit flavored drinking vinegar) or champagne vinegar onto the squash for a blast of flavorful steam. Use a tong to flip each round over and roast another 10 minutes. Serve immediately.
