Aceto Vivo is a lively, unpasteurized red wine vinegar. Many commercially produced vinegars fall short on flavor, balance and overall character. Much of this has to do with the fact that they are overwhelmingly produced from inferior wine, heated to disable any live cultures, and bottled without any exposure to the softening and flavor enhancing influences of oak. Aceto Vivo is produced to our specifications at an artisanal acetaia in Tuscany on one of Chianti Classico’s most distinguished domaines.
